French Onion Chicken

Ingredients:

  • 1 lb boneless, skinless chicken thighs

  • 1 large yellow onion

  • 1 tbsp butter

  • 2 tsp dried thyme

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt, to taste

  • 4 oz Gruyère cheese, shredded or sliced

Instructions:

  1. Preheat the oven to 350°F.

  2. Thinly slice your onion and add it to a large pan over medium heat. Add 1 tbsp of butter and a pinch of salt to help the onions start caramelizing. Season with half of the dried thyme. Let the onions cook down, stirring occasionally, until they’re soft and golden.

  3. Once the onions have reduced in volume and are fragrant, pour about 2 tbsp of water into the pan. Stir well to loosen all the caramelized bits from the bottom—this is a quick cheat to get that deep caramelized flavor without standing at the stove forever.

  4. In a baking dish, arrange your chicken thighs in a single layer. Season generously with salt, paprika, garlic powder, onion powder, and the remaining thyme. Spoon a generous amount of the caramelized onions over each thigh, then top everything with the cheese.

  5. Bake for 30–40 minutes, or until the chicken reaches an internal temperature of 165°F.

  6. Serve with mashed potatoes and Brussels sprouts for the perfect cozy meal.
