Roasted Red Pepper Feta Dip

Ingredients:

  • 2 red peppers

  • 1 jalapeño

  • 3 cloves garlic

  • 1 block feta

  • 1/4 c plain greek yogurt

  • 1 tsp paprika

  • Salt, to taste

  • Olive Oil

Instructions:

  1. Preheat the oven to 450°F.

  2. Wash and dry the peppers, then place them on a baking sheet along with the garlic cloves. Drizzle generously with olive oil, making sure everything is well coated. Roast for about 15 minutes, until the peppers are soft and nicely charred.

  3. Remove peppers from the oven and allow to cool completely. Once cool, remove the stems and seeds, then transfer the peppers to a blender or food processor. (If you like extra heat, leave the seeds in the jalapeño.)

  4. Add the Greek yogurt, feta, paprika, and salt.

  5. Blend until mostly smooth, then slowly drizzle in olive oil until the dip reaches your desired consistency.

  6. Taste and adjust seasoning if needed, then serve with sliced veggies, bread, grilled meats, or spooned over a salad.
