Fluffy Buttermilk Waffles

Ingredients:

  • 4 cups flour

  • 2 tsp salt

  • 2 tsp baking soda

  • 4 tbsp sugar

  • 4 eggs

  • 3 c buttermilk

  • ¾ c butter, melted

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking soda, and salt until well combined.

  2. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and oil until smooth.

  3. Make a small well in the center of the dry ingredients and pour in the wet mixture. Gently mix until just combined, stopping as soon as no dry streaks remain. Do not overmix.

  4. Let the batter rest for 10 to 15 minutes. This helps the waffles cook up lighter and fluffier.

  5. While the batter rests, preheat your waffle iron. Lightly spray with cooking spray.

  6. Pour the batter into the waffle iron and cook according to your machine’s instructions, until golden and crisp.

  7. Serve with butter and warm syrup <3
