Copycat Olive Garden Chicken & Gnocchi Soup

Ingredients:

  • 2 cups chicken broth

  • 4 cups water

  • 1 lb chicken breast

  • 1/2 onion

  • 2 carrots

  • 12 oz can evaporated milk

  • 1/2 tbsp salt

  • 2 oz spinach

  • 1 lb gnocchi

Instructions:

  1. Finely chop the onion and carrots.

  2. In a large pot, add the chicken broth, water, chicken breast, onion, and carrots. Season the liquid generously with salt.

  3. Bring to a boil and cook until the chicken is fully cooked and the vegetables are tender.

  4. Remove the chicken from the pot and chop into bite-sized pieces. Return the chicken to the pot.

  5. Stir in the evaporated milk and bring the soup back to a gentle boil.

  6. Add the gnocchi and cook for 2 to 3 minutes, or until they float to the surface.

  7. Remove the pot from the heat. Add the chopped spinach and stir until wilted from the residual heat.

  8. Taste and adjust salt as needed. This soup can take more salt than you think, so don’t be afraid to season to taste.
