Simple Banana Bread with a Sweet Crumb Topping

Crumb Topping:

  • 1 stick butter, softened

  • 1 cup flour

  • 1 cup sugar

Banana Bread:

  • 5 super ripe bananas

  • 2/3 cup melted butter

  • 1 1/2 cup brown sugar

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 2 eggs

  • 3 cup flour

  • 1 tsp cinnamon

Instructions:

  1. Preheat oven to 350°F.

  2. In a large bowl, peel and mash your bananas until you have a lumpy puree.

  3. Add in the melted butter (browned if you want something extra special), mix again.

  4. To the mixture, add your brown sugar, baking soda, salt, and vanilla extract. Mix to combine, breaking up any larger chunks of banana.

  5. Whisk in your 2 large eggs before adding flour and cinnamon. At this point, you want to mix as little as possible. Stop stirring when there are no visible streaks of flour.

  6. Pour the batter into a greased bread pan. If your pan is small, you will be able to make 2 loaves.

  7. In another bowl, mix your crumb topping. I like to use a fork, combining until a crumbly mixture forms. Pour this mixture over your batter, pressing to secure it into the bread.

  8. Bake at 350°F for 55 to 65 minutes, until golden brown and a toothpick comes out clean.

  9. Serve with a smear of butter and a sprinkle of flaky salt!
