The Best Granola Ever (Easy Homemade Granola)

Ingredients:

  • 4 cups old-fashioned oats

  • 1½ cups chopped nuts (pecans, almonds, walnuts — or a mix, all work great), optional

  • ¼ cup avocado oil (any neutral oil works here)

  • ¼ cup honey

  • ½ cup brown sugar

  • 1 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • 1½ cups dried fruit, optional

Instructions:

  1. Preheat your oven to 300°F and line two baking sheets with parchment paper.

  2. In a small saucepan over medium-low heat, add the oil, honey, and brown sugar. Stir occasionally until the honey thins out and the sugar is fully dissolved. You don’t want this boiling, just warm and smooth. Once you take it off the heat, stir in the vanilla.

  3. In a big bowl, add the oats, chopped nuts, cinnamon, and salt. Quickly toss so everything’s evenly distributed.

  4. Pour the warm honey mixture over the oats and mix until thoroughly combined. No dry oats!

  5. Divide the mixture between your 2 baking sheets. Make sure the pans aren’t too crowded so the granola can crisp up.

  6. Bake for 40 minutes, stirring the mixture every 10 minutes so everything gets evenly browned.

  7. Once it’s done, take it out and let it cool completely.

  8. Once fully cooled, break it into clusters and stir in the dried fruit.

  9. Store in an airtight container and enjoy in every way you could imagine!
